Zucchini noodle bolognese

We all love good pasta! So how about a delicious and nutrient dense bolognese? This recipe will allow you to incorporate a variety of vegetables and make bolognese even tastier, here's what you’ll need.


Ingredients (4 servings):

  • 2 lb. minced meat (we used organic from Costco)

  • ½ onion

  • 2-4 garlic cloves

  • 1 red or orange bell pepper

  • 1 cup kale

  • ½ cup parsley

  • 1 cup spinach

  • 2 tomatoes

  • 1 can organic tomato paste (no sugar added)

  • Salt & pepper

  • 1-2 zucchini

  • Olive oil

  • Sliced parmesan cheese

Instructions:

  1. Chop the onion, garlic cloves, bell pepper, kale, spinach, parsley and tomatoes really small with a food processor or similar. We used Thermomix, but you may also chop them really small by hand.

  2. Mix everything together with the tomato paste and minced meat. Season to taste with salt and pepper.

  3. Cook for about 40-45 minutes low until tender.

  4. Make curly spaghetti zucchini noodles using a vegetable spiralizer and cook in a pan or skillet at low temperature with a tablespoon of olive, salt and pepper for about 5-10 minutes, depending on the texture you desire.

  5. Serve with sliced parmesan cheese on top!


You may mix the noodles with real spaghetti or use other pasta if desired. Remember mixing and trying new things in the kitchen is the secret to amazing meals!
